VEGETARIAN ENTREES

Eggplant Lasagna - Eggplant slices dipped in eggwash and bread crumbs and parmesan cheese and sauted in oil, cottage cheese and sour cream makes the "sauce" - the Eggplant is the "Meat"; baked and served with Green Salad

Veggie Pot Pie - Instead of Chicken or Beef, Vegetables are cooked in vegetable broth thickened and baked in a rich pastry shell

Meatless Jambalaya - Onions, bell pepper, and garlic is the base for this meatless jambalaya; tomatoes and spices and herbs and two different kinds of beans are combined and served over Hot Rice

VEGETARIAN SOUPS

All Soups are served with Hot Bread and Green Salad

Minnestrone w/parm cheese - Rich tomato-based soup with beans and vegetables, cooked in beef broth and pasta added and cooked till tender

Cauliflower Soup - Cauliflower florets cooked in butter and onion and low-fat chicken broth; pureed till smooth; seasoned with chives and salt & pepper

Hominy Chili w/Beans - White Hominy and Red Beans are the base for this tomato-based soup, garlic and spices, sour cream and cheddar cheese finish this hearty soup

Black Bean Soup - Black Beans cooked in onion, celery and garlic, carrots and vegetable broth

Chunky Potato Soup - Diced Potatoes cooked in a rich thickened sauce

Cream of "Anything" Soup - Any kind of vegetables we have on hand, with potato and onion, and herbs, cooked till tender and pureed, milk added for richness and garnished with chives

Very Vegetable Soup - Vegetable broth based soup bursting with vegetables and macaroni
